    The process for oven-baked pork spare ribs starts with choosing the right cut of ribs. Look for racks of rib with lots of meat on the bones, good marbling of fat, and thin membranes on the back. To begin prepping the ribs, pull the thin membrane away by slipping a butter knife underneath.

    Then, rub a generous layer of seasoning on both sides of the ribs. For extra heat, use a combination of chili powder, cumin, smoked paprika and cayenne, or go milder with garlic, oregano, and thyme. Next, wrap the ribs in aluminum foil and set aside while you prepare the basting liquid. Combine a cup of brown sugar, half a cup of tomato sauce, two tablespoons of Worcestershire sauce, a teaspoon of garlic powder, and two tablespoons of apple cider vinegar.
